  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour Can be substituted with gluten-free flour blend.
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups chopped pecans Consider toasting for extra flavor.

Preparation
  1. Preheat your oven to 350F (175C). Grease and lightly flour a 9×13 inch baking dish or coat it with nonstick cooking spray.
  2. In a large mixing bowl, whisk together the melted butter and sugar until well combined.
  3. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, combine the flour, baking powder, and salt.
  5. Gradually fold the dry ingredients into the wet mixture until just incorporated. Avoid overmixing.
  6. Gently fold in the chopped pecans, ensuring they are evenly distributed throughout the batter.
  7. Pour the batter into the prepared baking dish and spread it evenly with a spatula.
Baking
  1. Bake for 30 to 35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out with a few moist crumbs.
  2. Let the pecan bread cool in the pan for at least 15 minutes before slicing into squares and serving.

Notes

Serve warm or at room temperature, pairing wonderfully with coffee or tea. To store leftovers, keep in an airtight container at room temperature for up to three days, or wrap tightly in plastic and freeze for up to three months.
