Ingredients

Main Ingredients
  • 1.5 to 2 pounds pork tenderloin, sliced into 1-inch medallions Ensure even slicing for consistent cooking.
  • 1 cup champagne or dry sparkling wine
  • 1/3 cup honey or firmly packed light brown sugar Use brown sugar for a deeper flavor.
  • 2 tablespoons Dijon mustard Feel free to experiment with different types of mustard.
  • 1/2 teaspoon kosher salt Optional; adjust to taste.
  • 1/4 teaspoon black pepper Optional; adjust to taste.

Method

Preparation
  1. Place the pork tenderloin medallions in an even layer in the slow cooker. Avoid stacking them too high.
  2. In a small bowl, whisk together champagne, honey, and Dijon mustard until smooth. Add salt and pepper if using.
  3. Pour the champagne mixture over the pork medallions.
Cooking
  1. Cover and cook on LOW for 3 1/2 to 4 1/2 hours or on HIGH for 2 to 2 1/2 hours until cooked through.
  2. Transfer the medallions to a serving platter and keep warm with foil.
  3. Pour the cooking liquid into a saucepan, bring to a simmer over medium-high heat, and reduce by half for 8 to 12 minutes.
  4. Adjust glaze seasoning if necessary and spoon it over the medallions. Serve with your favorite sides.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to three days. Reheat gently in the microwave or on the stove. For a thicker glaze, let it reduce longer in the saucepan. Experiment with adding fresh herbs for varied flavors.
