Ingredients

Main Ingredients
  • 2 pounds boneless, skinless chicken breasts
  • 4 large celery stalks, chopped (about 2 cups)
  • 1 can (10.5-ounce) cream of chicken soup
  • 1 cup low-sodium chicken broth
  • 1 teaspoon salt-free or low-salt all-purpose seasoning blend (or poultry seasoning)

Method

Preparation
  1. Place the raw chicken breasts in a single layer on the bottom of a 4- to 6-quart slow cooker.
  2. Scatter the chopped celery over the chicken.
  3. In a bowl, whisk together the cream of chicken soup, chicken broth, and seasoning blend until mostly smooth.
  4. Pour this mixture over the chicken and celery, ensuring most of the chicken is covered.
Cooking
  1. Cover and cook on Low for 6–7 hours or on High for 3–4 hours until the chicken is tender.
  2. Taste and adjust seasoning if needed. Shred the chicken if desired and serve over mashed potatoes, rice, or noodles.

Notes

For added flavor, sear the chicken breasts in a skillet before placing them in the slow cooker. If you prefer heat, add red pepper flakes to the mixture. You can substitute celery with other vegetables like carrots or green beans.
