Preparation
- Pat the roast dry with paper towels. Rub it with olive oil and Worcestershire sauce.
- Combine garlic, onion powder, smoked paprika, thyme, salt, and pepper; rub over the meat.
- Lay bacon slices over and around the sirloin, tucking the ends underneath. Use kitchen twine if necessary to hold in place.
Cooking
- Arrange sliced onion in the slow cooker, pour in beef broth, and place the bacon-wrapped sirloin on top.
- Cover and cook on LOW for 4 to 6 hours, checking for doneness at the earlier time.
- Transfer the roast to a foil-lined baking sheet and broil for 2 to 4 minutes until the bacon is crispy.
- Let the sirloin rest for about 10 minutes before slicing. Serve with onions and cooking juices.
Notes
For extra flavor, marinate the sirloin overnight in the refrigerator before cooking. Experiment with different spices to customize the taste. If you want a spicier kick, add some crushed red pepper flakes to the spice mix.
