  • 6 pieces bone-in, skin-on chicken thighs Thighs provide richer flavor.
  • 1 pound baby potatoes, halved Choose small potatoes for even cooking.
  • 4 medium carrots, peeled and cut into thick pieces Cut into larger pieces to prevent mushiness.
  • 1 envelope onion soup mix Adds flavor base for the dish.
  • 10.5 ounces condensed cream of chicken soup Can substitute with cream of mushroom soup.

Preparation
  1. Lightly coat the inside of your slow cooker if needed for easy cleanup.
  2. Add the halved baby potatoes and carrot pieces to the bottom in an even layer.
  3. Place the chicken thighs on top of the vegetables, skin side up, fitting them in a single layer as much as possible.
  4. In a small bowl, stir together the onion soup mix and condensed cream of chicken soup until combined. Spread the mixture evenly over the chicken.
Cooking
  1. Cover and cook on low for 6 to 8 hours, or until the chicken is very tender and the vegetables are soft.
  2. Before serving, spoon some of the pan juices over the chicken and vegetables.
  3. Serve directly from the slow cooker for a casual family-style meal.

Notes

For extra flavor, consider adding fresh herbs like thyme or rosemary. If you prefer a thicker sauce, mix a tablespoon of cornstarch with cold water and stir it into the slow cooker for the last 30 minutes of cooking. You can also add other vegetables like green beans or peas for more variety.
