  • 2.5 pounds beef stew meat or beef sirloin, cut into 1- to 1 1/2-inch chunks Ensure beef is cut into uniform pieces for even cooking.
  • 2 cans condensed beefy mushroom or cream of mushroom soup (10.5-ounce each)
  • 1 packet dry onion soup mix (1-ounce) Sprinkle evenly over beef.

Preparation
  1. Lightly spray the inside of a 5- to 7-quart slow cooker with nonstick cooking spray.
  2. Place the beef chunks into the bottom of the slow cooker in an even layer, breaking up any pieces that are stuck together.
  3. Sprinkle the dry onion soup mix evenly over the beef.
  4. Spoon the condensed mushroom soup over the beef and seasoning.
Cooking
  1. Cover the slow cooker with the lid and cook on LOW for 7 to 8 hours, or HIGH for 4 to 5 hours.
  2. Once the beef is tender, stir to combine the soups and cooking juices into a smooth gravy.
  3. Taste and adjust seasoning as needed.

Notes

Serve hot over mashed potatoes, noodles, or rice. Garnish with fresh herbs for added flavor. For thicker gravy, consider mixing cornstarch with water and adding it towards the end of cooking.
