  • 3 pounds small red potatoes, scrubbed and quartered
  • 1/2 cup unsalted butter, melted Can be substituted with olive oil for a healthier option.
  • 2 packets dry onion soup mix Use low-sodium for a healthier version.

Method
 

Preparation
  1. Rinse the red potatoes under cool water, scrub off any dirt, and pat them dry. Cut each potato into quarters.
  2. Lightly grease the inside of your slow cooker. Place the quartered potatoes in an even layer.
  3. In a small bowl, melt the butter and mix in the dry onion soup mix until well combined.
  4. Pour the butter mixture over the potatoes and gently toss to coat.
Cooking
  1. Cover and cook on LOW for 4 to 5 hours or HIGH for 2 to 3 hours until tender.
  2. Stir once or twice during cooking for even coating.
Serving
  1. Serve hot, drizzling the caramelized onion butter sauce over the potatoes.

Notes

These potatoes can be served alongside grilled meats or roasted chicken. Leftovers can be stored in an airtight container for up to three days.
