Ingredients

Main Ingredients
  • 3 large russet potatoes, scrubbed and sliced in half lengthwise
  • 14 ounces smoked sausage, sliced into 1/2-inch rounds
  • 1 can (10.5 ounces) condensed cream of mushroom soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese, divided

Method

Preparation
  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Lightly grease a clear glass 9×13 baking dish.
  3. Arrange the russet potato halves cut-side down in the dish so they fit in a single layer.
  4. In a bowl, stir together the condensed cream of mushroom soup, sour cream, and 1 cup of the shredded cheddar until well combined.
  5. Spoon and spread this mixture over and around the potatoes.
  6. Scatter the sliced smoked sausage over the top, nestling some pieces down between the potatoes.
Baking
  1. Cover the dish tightly with foil and bake for 1 hour.
  2. Remove the foil and check the potatoes with a fork to see if they are tender.
  3. Sprinkle the remaining 1 cup of cheddar cheese over the top and return the dish to the oven uncovered.
  4. Bake for an additional 15 to 20 minutes until the cheese is melted and the potatoes are fully fork-tender.
  5. Let rest for 10 minutes before serving.

Notes

Use fresh ingredients for the best flavor. Slice the potatoes evenly for consistent cooking. You can add vegetables like bell peppers or onions for extra nutrition and taste. For a healthier twist, consider using turkey sausage and light sour cream, and swap the cheddar cheese for Monterey Jack or mozzarella.
