Preparation
- Preheat the oven to 425 degrees F.
- Line a baking sheet or small baking pan with foil and lightly brush it with a little of the melted butter.
- Trim the potatoes into neat rectangular blocks, then slice them very thinly, keeping the slices in order so each potato can be restacked into its original shape.
- Brush the potato slices with melted butter as you restack them, then place each stack cut-side up on the prepared pan.
- Sprinkle evenly with the kosher salt.
Baking
- Bake for 45 to 55 minutes, brushing once or twice with any remaining butter, until the potatoes are tender in the center and deeply golden and crispy around the edges.
- Remove from the oven, scatter with the chopped fresh herbs, and let the potatoes rest for 5 minutes before serving so the layers hold together better.
Notes
Make sure to slice the potatoes as evenly as possible for even cooking. For extra flavor, try adding some garlic powder or paprika to the potatoes before baking. If you prefer a vegetarian option, you can skip the butter and use olive oil instead. Leftovers can be stored in an airtight container in the refrigerator for up to three days.
