Preparation
- Preheat the oven to 425°F (220°C) and grease a baking sheet with melted butter.
- Rinse the baby potatoes and scrub off any dirt, leaving the skins on.
- Place the potatoes in a saucepan, cover with cold water, and boil until fork-tender (12 to 15 minutes).
- Drain and let steam for 3 to 5 minutes.
Cooking
- Spread the potatoes on the baking sheet, and gently flatten each one to about 1/2 inch thick.
- Brush melted butter over the tops and edges of all potatoes, ensuring they are well coated.
- Sprinkle grated parmesan over the potatoes, allowing some to fall onto the pan.
- Bake for 20 to 25 minutes until golden and crispy.
- Let sit for 3 to 5 minutes, then loosen with a thin spatula and serve hot.
Notes
Best served hot. For extra flavor, top with fresh herbs, extra cheese, or a dollop of sour cream. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat at 350°F (175°C) for 10-15 minutes.
