  • 2 1/2 pounds russet or Yukon Gold potatoes, peeled and thinly sliced
  • 2 medium yellow onions, thinly sliced
  • 4 tablespoons lard

Method
 

Preparation
  1. Preheat the oven to 375 degrees F and lightly grease a 9×13-inch glass baking dish with a little of the lard.
  2. Layer one-third of the sliced potatoes in the baking dish. Then add one-third of the onions and dot with one-third of the lard.
  3. Repeat these layers two more times, finishing with lard on top.
Baking
  1. Cover the dish tightly with foil and bake for 45 minutes until the potatoes begin to soften.
  2. Remove the foil and continue baking for 25 to 35 minutes more, until the potatoes are fork-tender and the top is golden brown with crisp edges.
  3. Let the dish rest for 10 minutes before serving so the layers settle and the potatoes absorb the flavor.

Notes

Serve hot, pairing with roasted meats or fresh salad. Store leftovers covered in the fridge for up to 3 days or freeze for up to 3 months. Reheat before serving.
