  • 3 pounds bone-in, skin-on chicken thighs and drumsticks Ensure pieces are arranged skin side up.
  • 1 packet dry onion soup mix (about 1 ounce)
  • 1 can condensed cream of chicken soup (10 1/2 ounces)

Preparation
  1. Preheat the oven to 350°F and lightly grease a white oval casserole dish or a 9-by-13-inch baking dish.
  2. Arrange the chicken pieces in the baking dish in a single layer, skin side up.
  3. In a medium bowl, stir the dry onion soup mix into the condensed cream of chicken soup until evenly combined.
  4. Spread the mixture over the chicken as evenly as possible.
Cooking
  1. Cover the dish tightly with foil and bake for 45 minutes.
  2. Remove the foil and continue baking for an additional 25 to 35 minutes, until the chicken is very tender, browned on top, and cooked through to 175°F in the thickest pieces.
  3. Let the chicken rest for 5 to 10 minutes before serving.

Notes

For extra flavor, marinate the chicken in the soup mixture for a few hours before baking. Ensure not to overcrowd the baking dish for even cooking. For crispy skin, let the chicken bake uncovered for the final 10 minutes.
