  • 1 pound ground beef (80–90% lean)
  • 1 15-ounce can chili beans in mild chili sauce, undrained
  • 2 cups shredded sharp cheddar cheese
  • 1 9–10-ounce bag sturdy corn tortilla scoop chips

  • pinch salt to taste
  • pinch black pepper to taste

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium-high heat, cook the ground beef for 6–8 minutes until fully browned. Drain excess grease.
  3. Stir in the chili beans and let simmer for 3–5 minutes until thickened.
Assembly
  1. Layer tortilla chips in a 9×13-inch casserole dish, filling each scoop with the beef chili mixture.
  2. Top with shredded cheddar cheese.
Cooking
  1. Bake for 8–12 minutes until the cheese is melted and bubbly.
  2. Cool slightly before serving.

Notes

Serve these delicious scoops warm straight from the oven. You can add a dollop of sour cream or a sprinkle of fresh cilantro for extra flavor. They are perfect as an appetizer or a main dish. If you have leftovers, store them in an airtight container in the refrigerator for about 3–4 days. Reheat in the oven or microwave before serving to relive the cheesy goodness.
