Preparation
- Preheat your oven to 300°F (150°C).
- Choose a deep baking dish or casserole dish that will comfortably hold the roast with room around it for the au jus.
- Pat the beef roast dry with paper towels.
- Place the roast in the center of the baking dish and sprinkle the dry au jus gravy mix evenly over the top and sides of the roast. Gently press the seasoning onto the meat.
- Slowly pour the beef broth around the roast into the baking dish.
- Cover the baking dish tightly with heavy-duty aluminum foil or a fitted lid.
Cooking
- Bake for 3 to 3 ½ hours, until the beef is very tender.
- Carefully remove the dish from the oven and let the roast rest for about 10 minutes.
- Skim excess fat from the au jus, slice the roast, and return the slices to the au jus before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze in a freezer-safe container. Reheat slices in a skillet with some au jus over low heat.
