Preparation
- Heat a large cast-iron skillet or flat griddle over medium-high to high heat until very hot.
- Divide the ground beef into 8 loose balls of equal size, do not pack tightly.
Cooking
- Place 2 to 4 beef balls on the hot skillet, sprinkle lightly with salt, and smash each with a sturdy spatula until thin.
- Cook undisturbed for 2 to 3 minutes until edges turn dark and crisp.
- Scrape under each patty with a sharp spatula, flip, and top with cheese immediately.
- Cook for an additional 30 to 60 seconds until cheese melts and burgers are cooked through.
- Stack two patties together for each serving and serve hot, either in lettuce wraps or with preferred toppings.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet over medium heat. Can freeze wrapped tightly for later use.
