  • 1 unbaked 9-inch 9-inch pie crust Store-bought or homemade
For the filling
  • 1 cup graham cracker crumbs
  • 1 cup sweetened shredded coconut
  • 1 cup finely chopped pecans
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 large eggs
  • 1/2 cup unsalted butter, melted Melted but not too hot
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Method
 

Preparation and Mixing
  1. Preheat your oven to 350°F (175°C). Place the unbaked pie crust into a 9-inch pie dish and crimp the edges if desired.
  2. In a large bowl, stir together the graham cracker crumbs, shredded coconut, chopped pecans, granulated sugar, brown sugar, and salt until evenly distributed.
  3. Pour in the melted butter, then add the eggs and vanilla extract. Stir until everything is thoroughly combined. The mixture should look thick, sticky, and slightly crumbly.
Baking
  1. Spoon the filling into the prepared pie crust and spread it evenly.
  2. Bake for approximately 40–45 minutes, until the top is golden brown and the center looks mostly set with just a slight jiggle.
Cooling and Serving
  1. Let the pie cool on a wire rack for at least 1–2 hours before slicing.
  2. Slice with a sharp knife and serve at room temperature or slightly warm, optionally adding a scoop of vanilla ice cream.

Notes

Store any leftover pie in an airtight container at room temperature for up to 2 days, or refrigerate it for up to a week. Reheat in the oven before serving for the fresh-baked taste. For variations, consider adding chocolate chips, butterscotch chips, or spices like cinnamon.
