  • 3 cups chopped or shredded cooked chicken
  • 1.5 pounds Russet or Yukon Gold potatoes, peeled and diced
  • 1 medium yellow onion, diced
  • 2 medium carrots, sliced
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 7 cups chicken broth
  • 2 tablespoons unsalted butter
  • 1 teaspoon dried thyme
  • 0.75 teaspoon salt or to taste
  • 0.25 teaspoon black pepper

Method
 

Cooking
  1. Melt the butter in a large Dutch oven or soup pot over medium heat.
  2. Add the onion, carrots, and celery. Cook for 5 to 6 minutes, until they begin to soften.
  3. Add the garlic and thyme. Cook for an additional 30 seconds.
  4. Stir in the diced potatoes and chicken broth.
  5. Bring the mixture to a gentle boil, then reduce to a simmer. Cook for 15 to 20 minutes, until the potatoes and carrots are tender.
  6. Stir in the cooked chicken and simmer for another 5 minutes.
  7. Season with salt and black pepper to taste. If you like, mash a few potato pieces into the broth for a thicker consistency.
  8. Serve warm.

Notes

Store leftover soup in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
