Ingredients

Main Ingredients
  • 2 large chicken breasts (about 500 to 600g) Use boneless skinless for best results.
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 can cream of chicken soup (10.5 oz or 300g)
  • 1 can cream of mushroom soup (10.5 oz or 300g)
  • 1 cup chicken broth
  • 1 block cream cheese (8 oz or 225g, softened and cubed) Ensure cheese is softened for easier mixing.
  • 1 cup shredded cheddar cheese
  • 1 small onion (finely diced)
  • 2 cloves garlic (minced)
  • 1 tsp Italian seasoning
  • 250 to 300 g spaghetti Cook according to package instructions.
  • 1 to 2 cups reserved pasta water or extra broth (as needed) Use as needed to adjust sauce consistency.

Method

Preparation
  1. Add the chicken to the crockpot. Season it with salt, pepper, garlic powder, and onion powder.
  2. Pour in the cream of chicken soup, cream of mushroom soup, chicken broth, diced onion, minced garlic, and Italian seasoning. Stir gently to combine everything around the chicken.
Cooking
  1. Cook on LOW for 4 to 5 hours or on HIGH for 2.5 to 3 hours, until the chicken is tender and easy to shred.
  2. Remove the chicken and shred it with two forks. Return the shredded chicken to the crockpot.
  3. Stir in the cream cheese until it is fully melted and smooth. Add the cheddar cheese and mix until creamy.
Combining
  1. Cook the spaghetti separately until it is just al dente. Drain but reserve a bit of the pasta water.
  2. Add the spaghetti to the crockpot. Mix everything well, adding a splash of pasta water or broth if needed to loosen the sauce.
  3. Let everything sit in the crockpot on warm for 5 to 10 minutes so the flavors combine.

Notes

Serve warm, garnished with extra cheddar cheese or fresh herbs if desired. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
