  • 2 cans corned beef, about 12 ounces each
  • 4 large russet potatoes, peeled and thinly sliced Ensure the potatoes are thinly sliced to cook evenly.
  • 1 medium onion, thinly sliced

Method
 

Preparation
  1. Preheat the oven to 375 degrees F and lightly grease a glass baking dish.
  2. Spread a layer of sliced potatoes in the bottom of the dish.
  3. Add a layer of sliced onion on top.
  4. Break the corned beef into shreds and layer it over the onions.
  5. Repeat the layers until all the ingredients are used, finishing with potatoes on top.
  6. Cover the dish tightly with foil and bake for 1 hour.
  7. After an hour, remove the foil and continue baking for 20 to 30 minutes more, until the potatoes are fork tender and the top is browned around the edges.
  8. Let the bake rest for 10 minutes before serving.

Notes

For extra flavor, consider adding cheese on top during the last 10 minutes of baking. Experiment with seasonings like garlic powder or pepper. You can also add other vegetables, like carrots or bell peppers.
