Preparation
- Preheat the oven to 375°F (190°C). Grease a 9x5-inch loaf pan or small baking sheet.
- Set aside 4–6 bacon slices and 1/2 cup cheddar for topping.
- Chop the rest of the bacon and mix it with ground beef, 1 1/2 cups cheddar, 1/2 cup barbecue sauce, salt, and pepper in a bowl.
- Shape the mixture into a loaf and place it in the pan.
- Lay the reserved bacon slices over the top and brush with 1/4 cup barbecue sauce.
Baking
- Bake for 35–40 minutes, then check the bacon. Brush with another 1/4 cup barbecue sauce and bake for an additional 15–20 minutes until the internal temperature reaches 160°F (71°C).
- Sprinkle the reserved cheddar on top, melt it in the oven if desired, then let it rest for 10 minutes before slicing.
Serving
- Serve warm with additional barbecue sauce.
Notes
To store leftovers, allow the meatloaf to cool completely. Wrap it tightly in plastic wrap or aluminum foil, or place it in an airtight container. It can be stored in the refrigerator for up to 3 days. You can also freeze it for up to 3 months. Just make sure to wrap it well to prevent freezer burn. You can customize this recipe by using different types of cheese, such as pepper jack for a spicier option or mozzarella for a milder flavor. You can also add chopped onions or bell peppers for extra flavor and texture.
