Amish Onion Gravy Pork Roast

Ingredients
  

Main Ingredients
  • 3 to 4 pounds boneless pork shoulder or pork butt roast
  • 2 one-ounce packets dry onion soup mix
  • 2 large yellow onions, peeled and thinly sliced
  • 2 cups low sodium beef broth

Method
 

Preparation
  1. Thinly slice the yellow onions from root to tip and scatter them in an even layer over the bottom of a 5 to 7 quart slow cooker.
  2. Sprinkle one packet of dry onion soup mix evenly over the sliced onions.
  3. Pat the pork roast dry and place it on top of the onions, fat side up.
  4. Sprinkle the second packet of dry onion soup mix over the pork.
  5. Pour the beef broth around the roast.
Cooking
  1. Cover and cook on LOW for 8 to 10 hours or HIGH for 4 to 5 hours until the pork is tender.
Serving
  1. Transfer the cooked roast to a cutting board, let it rest for 10 minutes, then slice.
  2. Stir the onions and gravy and serve it over the pork.

Notes

Best served with mashed potatoes, rice, or crusty bread to soak up the gravy. Can be stored in the refrigerator for up to 3 days or frozen for up to 3 months. Add garlic or herbs to the broth for extra flavor.
