Preparation
- Add the cubed Carola potatoes and chopped onion to the slow cooker.
- Pour the chicken broth over the top.
Cooking
- Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the potatoes are very tender.
- Once the potatoes are soft, use a potato masher to gently mash some of them right in the slow cooker. Leave plenty of chunks for that loaded potato soup texture.
- Add the cubed cream cheese and shredded cheddar cheese.
- Stir, cover, and let cook for another 15 to 20 minutes, then stir again until the soup is smooth, creamy, and velvety.
- Taste and adjust with salt and black pepper if needed.
Serving
- Ladle into bowls and serve hot with your favorite loaded potato toppings.
Notes
Serve this flavorful soup hot. Consider adding toppings like crispy bacon, chopped green onions, or extra cheese. Pair with crusty bread for a satisfying meal. To store leftovers, let the soup cool to room temperature and transfer to an airtight container. Refrigerate for 3 to 4 days or freeze for up to 3 months.
