Preparation
- Place the chicken thighs in the slow cooker.
- Pour in the butternut squash soup and chicken broth.
- Add the frozen mixed vegetables and sprinkle the poultry seasoning on top.
- Gently stir everything to combine.
Cooking
- Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the chicken is fully tender.
- Remove the chicken thighs and shred them using two forks.
- Return the shredded chicken to the slow cooker and stir well.
- Taste the soup and add a little salt and black pepper if desired.
- Let it sit for 5 minutes, then ladle into bowls and serve hot.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days or freeze for up to three months. Adjust seasoning with garlic, onion, or additional spices as desired. You can also add spinach or kale for extra nutrition.
