Ingredients

Main Ingredients
  • 1.5 pounds raw chicken tenderloins
  • 1 cup orange-colored puree (sweet potato or butternut squash) Can also experiment with carrot or pumpkin purees
  • 1 packet dry onion soup mix
  • 0.5 cup sour cream
  • 1 tablespoon olive oil For greasing the baking dish

Method

Preparation
  1. Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch glass baking dish with olive oil.
  2. Arrange the raw chicken tenderloins in a single layer in the baking dish.
  3. In a medium bowl, stir together the orange puree, dry onion soup mix, and sour cream until smooth and well combined.
  4. Spoon the sauce over the chicken and spread it gently so the tenderloins are evenly coated.
Cooking
  1. Bake uncovered for 25 to 30 minutes, or until the chicken is cooked through and reaches 165°F (74°C) in the thickest part.
  2. Let the dish rest for 5 minutes before serving.

Notes

Serve with a side of rice, mashed potatoes, or steamed vegetables. Pairs well with a fresh green salad. To store leftovers, let the chicken cool completely, then transfer it to an airtight container and refrigerate for up to 3 days.
