  • 1 9-inch unbaked pie crust Store-bought or homemade, unbaked
  • 1.5 cups heavy cream Ensure it's fresh
  • 1 cup packed brown sugar Can be adjusted for sweetness
  • 2 teaspoons ground cinnamon Increase to 2 1/2 tsp for deeper flavor

Method

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Place the unbaked pie crust into a 9-inch ceramic pie plate, crimping the edges as desired.
  3. In a medium bowl, whisk together the heavy cream, brown sugar, and cinnamon until the sugar is mostly dissolved.
  4. Pour the filling into the prepared pie crust, careful not to overfill.
  5. Set the pie plate on a baking sheet for easier handling and to catch any drips.
Baking
  1. Bake the pie for 35 to 45 minutes, until the top is golden brown and lightly crackled.
  2. The center should have a gentle wobble when nudged.
Cooling and Serving
  1. Allow the pie to cool for at least 2 hours before slicing.
  2. Serve at room temperature or slightly warm, optionally topped with whipped cream or vanilla ice cream.

Notes

Store leftovers in the refrigerator covered with plastic wrap or aluminum foil. Best enjoyed within 3-4 days; can be frozen for longer storage. Consider adding chopped nuts or a teaspoon of vanilla extract for variations.
