Preparation
- Lightly coat the inside of your slow cooker with a bit of nonstick spray or a thin smear of butter.
- Arrange the peeled banana halves in an even layer across the bottom.
- Spoon the crushed pineapple, juice and all, evenly over the bananas.
- Sprinkle the dry yellow cake mix evenly over the pineapple layer without stirring.
Cooking
- Cover and cook on low for 2 1/2 to 3 hours, until the bananas are tender and the top looks set and lightly golden.
Serving
- Let the dessert rest for 10 minutes before scooping into bowls.
- Serve warm, plain or with ice cream or whipped cream.
Notes
For a tropical feel, add some toasted coconut or sliced almonds on top. Store leftovers in an airtight container in the refrigerator for 2 to 3 days. Reheat in the microwave if needed.
