  1. I was preparing this recipe, and I dried the bird inside and out and seasoned the cavity and the outside of the chicken with salt, it was perfectly dry. When I went to apply the herb butter I noticed the chicken was moist and not dry. Then I realized that salt draws out moisture so I was having a hard time getting the butter to stick, even though I was drying again as I went. My question is can I add the salt and pepper to the herb butter, the butter should stick better because the salt won’t have time to draw out moisture from the chicken.
