Ingredients

Puff pastry, Brie, and cranberry sauce ready for assembling the bites
  • 1 sheet frozen puff pastry, thawed
  • 8 ounces Brie, chilled and cut into small cubes
  • 1/2 cup whole-berry cranberry sauce

Yield: 24 bites. Prep: 15 minutes. Bake: 15–18 minutes. Total: About 35 minutes.

How to Make Cranberry Brie Bites

Mini muffin pan filled with puff pastry, Brie, and cranberry sauce before baking
  1. Heat the oven to 375°F (190°C). Lightly grease a 24-cup mini muffin pan.
  2. Unfold the thawed puff pastry and roll it gently to smooth the creases. Cut it into 24 even squares.
  3. Press one square into each muffin cup, leaving the corners visible above the rim.
  4. Put a small cube of cold Brie into each pastry cup. Add a small spoonful of cranberry sauce on top.
  5. Bake for 15–18 minutes, until the pastry is puffed and deeply golden at the edges and the cheese has melted.
  6. Leave the bites in the pan for about 5 minutes. Lift them out carefully and serve warm.

Serving Ideas

Arrange the bites on a platter with nuts, olives, or sliced fruit. They also sit nicely beside a cheese board. For the best contrast between flaky pastry and melted cheese, bring them to the table while still warm.

Variations & Tips

  • Prepare ahead: Fill the pastry cups a few hours early and refrigerate the pan. Bake when guests arrive.
  • Swap the preserve: Fig jam, raspberry preserves, or pepper jelly can replace cranberry sauce.
  • Keep Brie chilled: Cold cheese cuts into tidy cubes and is easier to divide among the cups.
  • Avoid overfilling: A modest spoonful of sauce helps prevent bubbling over.
  • Reheat gently: A few minutes in a low oven will revive the pastry if the bites cool before serving.
