Preparation
- Preheat the oven to 350°F and grease a 9x13-inch baking dish.
- In a saucepan, combine the soy sauce, brown sugar, garlic, ginger, and 3/4 cup of water. Bring to a gentle simmer.
- Mix the cornstarch with the remaining 1/4 cup of cold water. Stir it into the sauce and cook until lightly thickened.
Baking
- Place the chicken in the baking dish and spoon some teriyaki sauce over it. Bake for 25 to 30 minutes, until the chicken reaches an internal temperature of 165°F.
- After the chicken is cooked, let it rest briefly, then chop or shred it.
- Combine the chicken, cooked rice, broccoli, carrots, and most of the remaining teriyaki sauce in the baking dish.
- Bake for another 15 to 20 minutes, until the vegetables are tender and the casserole is hot throughout.
- Rest for 5 minutes, stir gently, and serve with additional teriyaki sauce if desired.
Notes
For extra flavor, marinate the chicken in teriyaki sauce for a few hours before cooking. You can substitute your favorite vegetables, like bell peppers or snap peas. For a cheesy variant, sprinkle shredded cheese on top during the last 5 minutes of baking.
