Preheat oven to 400 degrees Fahrenheit (200 degrees Celsius).
Scrub potatoes thoroughly and pat dry. Prick several times with a fork, rub with olive oil, and sprinkle with salt.
Place potatoes directly on the oven rack and bake for 60 minutes or until the skin is crisp and the center is soft.
While potatoes are baking, brown the ground beef in a large skillet over medium-high heat until fully cooked. Drain excess fat.
Stir in the taco seasoning and water. Reduce heat to low and simmer for 5 to 7 minutes until the liquid has thickened.
Slice the baked potatoes open lengthwise and fluff the insides with a fork.
Fill each potato with a portion of the seasoned beef and top with shredded cheese while hot.
Garnish with sour cream, salsa, red onion, jalapenos, and cilantro before serving.
