Ingredients

For the Steak
  • 2 pieces ribeye steaks
  • Salt and pepper
  • 2 tablespoons olive oil
For the Grits
  • 1 cup grits
  • 4 cups water
  • Salt to taste
  • 1 cup grated cheese (cheddar works well)
For the Cheesy Eggs
  • 4 eggs
  • 1/2 cup milk
  • 1 cup shredded cheese (your choice)
  • Salt and pepper to taste
For the Pancakes
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 piece egg
  • 2 tablespoons melted butter

Method

Cook the Steak
  1. Season the steaks with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Cook steaks for about 4-5 minutes on each side for medium-rare. Adjust time to your desired doneness.
  4. Let the steaks rest before slicing.
Prepare the Grits
  1. Boil water in a pot, and add salt.
  2. Stir in grits and reduce to a low heat.
  3. Cook for about 5-7 minutes, stirring occasionally.
  4. Add cheese and mix until creamy.
Make the Cheesy Eggs
  1. Beat eggs and milk in a bowl. Add salt and pepper.
  2. Pour the mixture into a heated non-stick skillet.
  3. Cook over low heat, stirring gently. When nearly set, add the shredded cheese and stir until melted.
Cook the Pancakes
  1. In a large bowl, mix flour, sugar, baking powder, and salt.
  2. In another bowl, mix milk, egg, and melted butter.
  3. Combine the wet and dry ingredients.
  4. Pour batter onto a heated griddle and cook until bubbles form. Flip and cook until golden.

Notes

Store leftovers in separate containers in the fridge. Steak can last up to 3 days, grits for about 2-3 days, eggs should be eaten within 2 days, and pancakes will stay fresh for up to 3 days. Reheat in the microwave or on the stovetop. For perfectly cooked steak, use a meat thermometer for accurate doneness. Stir the grits often to prevent sticking and clumping. Customize your cheesy eggs by adding veggies like spinach or bell peppers. For fluffy pancakes, don’t over-mix the batter; lumps are fine! Feel free to experiment with different types of meat, cheeses, or add fruits/nuts to pancakes.
