  • 1 bunch Asparagus Trimmed
  • 2 tbsp Olive oil For sautéing
  • to taste Salt
  • to taste Pepper
  • to taste Steak sauce For serving

Method

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Wash and pierce the potatoes with a fork. Bake them for about 45 minutes until they are soft.
  3. In a bowl, mix together the spinach, artichokes, cream cheese, sour cream, Parmesan cheese, minced garlic, salt, and pepper to prepare the dip.
Assembly
  1. Once the potatoes are cooked, take them out of the oven. Cut a slit on top and scoop some of the insides out. Mix the insides with the dip.
  2. Fill the potatoes with the artichoke mixture.
Cooking
  1. Season the steak with salt and pepper. Grill or pan-sear the steak to your desired doneness.
  2. In a separate pan, sauté asparagus in olive oil with salt and pepper until they are tender.
Serving
  1. Serve the steak alongside the stuffed baked potato and sautéed asparagus. Drizzle steak sauce over the steak for added flavor.

Notes

Use a meat thermometer to check steak doneness (135°F for medium-rare, 145°F for medium). Feel free to add more spices to the dip for extra flavor, such as red pepper flakes or chopped herbs. Customize by using different cheeses or adding cooked bacon.
