Spinach & Cream Cheese Stuffed Chicken Breast

Ingredients
  

  • 4 boneless , skinless chicken breasts (approx. 6-8 oz each)
  • 4 oz cream cheese, softened
  • 2 cups fresh baby spinach, chopped
  • 2 cloves garlic , minced
  • 1/4 cup grated parmesan cheese
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon sal t
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Method
 

  1. Preheat oven to 375°F (190°C).
  2. In a medium bowl, combine softened cream cheese, chopped spinach, minced garlic, and parmesan cheese until well blended.
  3. Slice a pocket into the thickest part of each chicken breast, being careful not to cut all the way through.
  4. Spoon the spinach and cream cheese mixture evenly into each chicken breast pocket.
  5. Secure the opening with toothpicks if necessary to prevent filling from leaking.
  6. Season the outside of the chicken breasts with paprika, salt, and pepper.
  7. Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown.
  8. Transfer the skillet to the oven and bake for 15-20 minutes, or until the internal temperature reaches 165°F (74°C).
  9. Remove from oven and let rest for 5 minutes before serving.
