Ingredients

Main ingredients
  • 2 14.75-oz cans salmon, drained and flaked
  • 2 large eggs
  • 0.5 cup finely chopped onion
  • 0.25 cup finely chopped bell pepper
  • 0.5 cup mayonnaise
  • 1 teaspoon yellow mustard
  • 1 teaspoon garlic powder
  • 0.5 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 cup cornmeal
  • 0.5 cup breadcrumbs or crushed crackers
  • 2 tablespoons chopped fresh parsley (optional)
  • Vegetable oil (for frying) For frying patties

Method

Preparation
  1. Drain the canned salmon and place it in a large mixing bowl. Remove any large bones or skin if desired, then flake the salmon with a fork.
  2. Add the eggs, onion, bell pepper, mayonnaise, mustard, garlic powder, paprika, salt, black pepper, cornmeal, breadcrumbs, and parsley. Stir until fully combined.
  3. Form the mixture into 6–8 evenly sized patties. If the mixture feels too wet, add a little more breadcrumbs.
Cooking
  1. Pour about 1/4 inch of vegetable oil into a large skillet and heat over medium heat.
  2. Carefully place the patties into the hot skillet. Fry for 3–4 minutes per side, or until golden brown and crispy.
  3. Transfer the cooked patties to a paper towel-lined plate to drain excess oil.

Notes

Serve with a side of coleslaw or a fresh green salad. They pair nicely with tartar sauce or hot sauce for added flavor. For extra flavor, use fresh herbs like dill or chives. Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to 3 months.
