Ingredients
Method
Prepare the candy mixture
- In a medium saucepan, combine the granulated sugar, corn syrup, and water. Cook over medium heat, stirring until the sugar dissolves.
- Bring the mixture to a gentle boil and cook until it reaches 240 degrees F (soft ball stage) on a candy thermometer, about 5 to 8 minutes.
- Remove from heat and immediately stir in the butter, vanilla, and salt.
- Let it cool for about 2 minutes, then stir in the marshmallow creme.
- Gradually mix in the powdered sugar until a soft, workable dough forms. Allow to cool enough to handle.
Shape the logs
- Divide the mixture in half.
- With lightly buttered hands, roll each portion into a log about 8 inches long.
- Place logs on parchment paper and chill for about 30 minutes.
Prepare and coat with caramel
- Place the unwrapped caramels and heavy cream in a microwave-safe bowl.
- Heat in 20 to 30 second intervals, stirring between each, until smooth.
- Spread or roll the chilled candy logs in the warm caramel, working quickly so the caramel stays soft.
Add the pecans
- Immediately roll each caramel-covered log in the chopped pecans, gently pressing them into the caramel to make them stick.
Chill and serve
- Wrap the pecan logs in parchment or wax paper and refrigerate for 1 to 2 hours, or until firm.
- Let the logs sit at room temperature for about 10 minutes before slicing.
- Cut into rounds and serve.
Notes
Store in an airtight container in the refrigerator for up to two weeks or freeze for longer storage. Best to slice after thawing.
