Preparation
  1. Place the freshly shredded sharp cheddar cheese in a medium mixing bowl.
  2. Add the mayonnaise, starting with about 3/4 cup.
  3. Drain the diced pimentos well and add them to the bowl.
  4. Stir everything together until evenly combined.
  5. Taste and adjust the texture if necessary.
  6. Transfer to a serving bowl, cover, and refrigerate for at least 30 minutes.

Notes

Serve chilled with crackers, fresh veggies, or as a spread on sandwiches. It also works well as a dip for tortilla chips. To store leftovers, keep in an airtight container in the refrigerator for up to a week. For extra flavor, consider garlic powder or a dash of hot sauce. For a smoother texture, blend ingredients with a food processor. Variations can include chopped green onions, diced jalapeƱos, or Worcestershire sauce.
