Ingredients

Main Ingredients
  • 6 slices thick-cut bacon, chopped Use thick-cut bacon for more flavor.
  • 1 medium head green cabbage, cored and roughly chopped
  • 1 teaspoon kosher salt Plus more to taste.

Method

Cooking
  1. Place a large cast iron skillet over medium heat.
  2. Add the chopped bacon in an even layer and cook, stirring occasionally, until the fat has rendered and the bacon pieces are crisp, about 8 to 10 minutes.
  3. Use a slotted spoon to scoop the crispy bacon onto a plate, leaving all the bacon grease in the skillet.
  4. Add the chopped cabbage to the hot bacon grease and toss to coat lightly, then sprinkle with kosher salt.
  5. Cook over medium heat, stirring every couple of minutes, until the cabbage is tender with a few golden edges, about 12 to 15 minutes. If the pan looks dry, lower the heat and add a tablespoon of water.
  6. Taste for salt and adjust as needed.
  7. Add the crispy bacon back into the skillet and combine, letting it cook for 1 to 2 more minutes.
  8. Serve hot.

Notes

Store leftovers in an airtight container in the refrigerator for 3 to 4 days. Reheat in a skillet over low heat. For variations, add onions or garlic with the bacon.
