  • 2 cups biscuit baking mix
  • 1 cup shredded sharp cheddar cheese For extra flavor, consider adding more cheese.
  • 2/3 cup whole milk Can substitute with low-fat or non-dairy milk.

Method
 

Preparation
  1. Preheat the oven to 425°F and lightly grease a cast iron skillet or mini muffin pan.
  2. In a medium bowl, stir together the biscuit mix, shredded cheddar cheese, and milk just until a soft dough forms. Do not overmix.
Baking
  1. Drop spoonfuls of the dough into the prepared skillet or muffin pan, leaving a little space between each bite.
  2. Bake for 12 to 15 minutes, until the tops are puffed and golden brown and the cheese is melted through.
Serving
  1. Serve warm as is, or brush with a little melted butter for an extra rich finish.
