Method
Preparation
- Chill the pineapple juice, cream of coconut, and coconut milk in the refrigerator until well chilled.
- Wash the fresh cranberries thoroughly under cold water and drain.
- Drain the pineapple chunks if using canned pineapple or cut fresh pineapple into bite-sized pieces.
Mixing
- In a large punch bowl, pour in the chilled pineapple juice.
- Shake or stir the cream of coconut until smooth, then add it to the pineapple juice.
- Slowly pour in the coconut milk while stirring gently.
- Using a large whisk, mix everything together until the punch becomes smooth, creamy, and evenly combined.
- Add the pineapple chunks to the punch bowl and gently stir until evenly distributed.
- Add the fresh cranberries and stir lightly, allowing them to float throughout the creamy coconut mixture.
Chilling and Serving
- Cover the punch bowl and refrigerate for at least 1 hour to allow the flavors to blend together.
- Before serving, give the punch another gentle stir to make sure the coconut mixture is well combined.
- Add ice cubes to individual serving glasses rather than directly to the punch bowl to prevent the drink from becoming diluted.
- Ladle the chilled coconut pineapple punch into each glass, making sure to include some pineapple chunks and cranberries.
- Sprinkle a little shredded coconut over the top for a beautiful snowy Christmas appearance.
- Garnish each glass with a few additional fresh cranberries for a festive presentation.
- Serve immediately while cold and creamy.
Notes
Make sure your ingredients are well chilled before mixing. For a creamier texture, blend the mixture instead of whisking it. Customize with other fruits like mango or kiwi for a tropical twist.
