For the Ribs
  • 2 racks racks of pork ribs
  • 1 cup BBQ sauce For glazing ribs
For the Spice Rub
  • 1 tablespoon smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon brown sugar
  • Salt and pepper to taste
For Smoking
  • Wood chips for smoking (e.g., hickory or apple wood)

Method

Preparation
  1. Preheat your smoker to 225°F (107°C).
  2. In a small bowl, mix together smoked paprika, garlic powder, onion powder, brown sugar, salt, and pepper. Rub this mixture all over the ribs.
Cooking
  1. Place the ribs in the smoker, bone side down, and add wood chips for smoke flavor.
  2. Smoke the ribs for about 4-5 hours, or until they are tender.
  3. Brush BBQ sauce on the ribs during the last 30 minutes of cooking.
  4. Remove ribs from the smoker, let them rest for 10 minutes, then slice and serve.

Notes

For added flavor, marinate the ribs overnight with the spice rub. Experiment with different types of wood chips for various smoky flavors. Monitor the internal temperature of the ribs; they should reach about 190°F (88°C) for tender meat.
