  • 4 pieces pork shanks (about 12-16 ounces each)
  • 1 large yellow onion (sliced)
  • 2 cups sauerkraut (lightly drained)
  • 1 cup dark beer (such as lager or bock)
  • 2 tablespoons whole-grain mustard

Method
 

Preparation
  1. Scatter the sliced onion across the bottom of the slow cooker.
  2. Spread the lightly drained sauerkraut evenly over the onion.
  3. Arrange the pork shanks over the sauerkraut.
  4. Pour the dark beer around the pork and spoon the whole-grain mustard over and around the shanks.
Cooking
  1. Cover and cook on LOW for 7-8 hours or HIGH for 4-5 hours, until the pork is extremely tender.
  2. Gently stir the sauerkraut and onions into the cooking juices.
Serving
  1. Serve each pork shank over the sauerkraut and onions with some of the savory juices spooned over the top.

Notes

For added flavor, toss in some garlic or caraway seeds with the onion and sauerkraut. To achieve a thicker sauce, remove the pork shanks after cooking and let the juices simmer on high for a few minutes to reduce.
