Ingredients
  

  • 2 pounds pork shoulder or pork loin cut into bite-sized chunks
  • 1 cup pineapple chunks
  • 1 red bell pepper chopped
  • 3 garlic cloves minced
  • 1 teaspoon fresh ginger grated
  • 1/2 cup hoisin sauce
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Green onions or parsley for garnish
  • Cooked rice for serving

Method

  2. Place the pork chunks into the slow cooker. Add pineapple chunks and chopped red bell pepper.

  4. In a medium bowl, whisk together hoisin sauce, soy sauce, brown sugar, rice vinegar, sesame oil, garlic, and ginger.

  6. Pour the sauce mixture over the pork and stir gently to coat everything evenly.

  8. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until the pork becomes tender.

  10. Mix cornstarch and water in a small bowl. Stir the mixture into the slow cooker during the last 20 minutes of cooking to thicken the sauce.
