Slow Cooker Herb Pot Roast with Vegetables

Ingredients
  

  • 3 lbs beef chuck roast
  • 1 lb baby gold potatoes
  • 3 large carrots cut into 2-inch chunks
  • 1 medium yellow onion sliced
  • 3 cloves garlic minced
  • 2 cups beef broth
  • 1/4 cup balsamic vinegar
  • 2 tbsp Worcestershire sauce
  • 1 tbsp dried rosemary
  • 1 tbsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Method
 

  1. Season the chuck roast generously with salt, pepper, rosemary, and thyme on all sides.
  2. In a large skillet, heat olive oil over medium-high heat. Sear the roast for 3-4 minutes per side until deeply browned.
  3. Place the onion, garlic, carrots, and potatoes in the bottom of a 6-quart slow cooker.
  4. Position the seared roast on top of the vegetables.
  5. In a small bowl, whisk together the beef broth, balsamic vinegar, and Worcestershire sauce.
  6. Pour the liquid mixture over the beef and vegetables.
  7. Cover and cook on the LOW setting for 8 to 10 hours until the beef is fork-tender.
  8. Remove the roast and vegetables carefully and place them on a large serving platter.
  9. Skim any excess fat from the liquid remaining in the pot.
  10. Pour a bit of the natural jus over the meat and garnish with fresh chopped parsley before serving.
