Season the chicken thighs generously with salt, pepper, thyme, and oregano.
In a large skillet, heat olive oil over medium-high heat. Sear chicken skin-side down for 5 minutes until crispy and golden. Flip and sear for 2 minutes.
Place the sliced onions and garlic in the bottom of a 6-quart slow cooker.
Position the seared chicken thighs on top of the onions, skin-side up.
In a small bowl, whisk together the beef broth, balsamic vinegar, and Worcestershire sauce.
Pour the liquid around the chicken (try not to pour directly over the skin to keep it crisp).
Cover and cook on the LOW setting for 5 to 6 hours (or HIGH for 3 hours) until the chicken is cooked through.
Optional: Sprinkle shredded cheese over the chicken during the last 10 minutes of cooking until melted.
Garnish with fresh parsley.
Serve hot, spooning the caramelized onions and juices over the chicken.
