  • 3 to 4 lb beef chuck roast Choose a good quality cut for better flavor.
  • 1 12 oz bottle or can dark beer (such as stout or porter) The type of beer will affect the flavor.
  • 1 oz packet dry onion soup mix Can substitute with other soup mixes for different flavors.

Preparation
  1. Place the beef chuck roast into the bottom of a large slow cooker, fat side up.
  2. Sprinkle the dry onion soup mix evenly over the top and sides of the roast, pressing it in lightly.
  3. Slowly pour the dark beer around the roast, avoiding rinsing off the soup mix.
  4. Cover the slow cooker with the lid and cook on LOW for 8 to 10 hours, until very tender.
  5. Transfer the roast to a plate and pull it into chunks.
  6. Stir the cooking liquid to combine and spoon it over the pulled beef before serving.

Notes

Leftovers should be stored in an airtight container in the refrigerator for 3 to 4 days, or can be frozen for up to 3 months. Thaw in the refrigerator before reheating. You can add garlic or herbs for extra flavor.
