Ingredients
  

  • 3 –4 lb pork roast shoulder or loin
  • 1 can whole cranberry sauce
  • 1/2 cup chicken broth
  • 1/4 cup brown sugar
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • Fresh thyme optional

Method
 

  1. Season the pork roast with salt and pepper on all sides.
  2. In a bowl, mix cranberry sauce, chicken broth, brown sugar, Dijon mustard, and garlic.
  3. Place the pork roast in the slow cooker.
  4. Pour the cranberry mixture over the pork.
  5. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours.
  6. Shred the pork with two forks directly in the slow cooker.
  7. Mix the shredded pork with the sauce and serve warm.
