  • 2 large boneless, skinless chicken breasts (about 1 1/2 pounds total)
  • 1 can diced tomatoes, with their juices (14.5 ounces)
  • 1 small onion, finely chopped (about 1 cup)
  • 1 teaspoon salt
  • 1 teaspoon sweet paprika (or regular paprika) Optional: add black pepper, garlic, or other spices.

Method
 

Preparation
  1. Place the raw chicken breasts in a single layer at the bottom of a slow cooker.
  2. Scatter the chopped onion evenly over and around the chicken.
  3. Sprinkle the salt and paprika over the chicken and onions.
  4. Pour the diced tomatoes with their juices over everything.
Cooking
  1. Cover and cook on LOW for 5 to 6 hours or HIGH for 2 1/2 to 3 hours until the chicken is tender.
  2. Shred the chicken in the slow cooker and stir it into the tomato and onion mixture.
  3. Adjust salt if needed.
Serving
  1. Serve hot over noodles, potatoes, or rice. For more flavor, add black pepper, sugar, and garlic if desired.
  2. To stretch the meal, stir in beans or macaroni during the last 20 to 30 minutes. Finish with sour cream, if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to three days or can be frozen. Reheat as needed. Experiment with spices and add vegetables for a more nutritious meal.
