Preparation
- Pat the beef dry with paper towels.
- Rub the sirloin with minced garlic and beef seasoning.
- Lay bacon strips across and around the roast, overlapping them slightly. Tuck the ends underneath and use kitchen twine if necessary.
Cooking
- Place the wrapped sirloin into the slow cooker with the bacon seams facing downward.
- Cover and cook on LOW until the beef reaches your preferred doneness and is tender, using a meat thermometer for accuracy.
- Transfer the cooked roast to a foil-lined baking sheet and broil until the bacon is browned and crisp.
- Let the sirloin rest before slicing.
Notes
Store any leftovers in an airtight container in the fridge for up to three days. For longer storage, freeze the sliced meat for up to three months.
