Arrange: Place the chicken thighs in the bottom of the slow cooker. Arrange the apple wedges around and on top of the chicken.
Whisk Glaze: In a small bowl, whisk together the apple juice, brown sugar, Dijon mustard, thyme, and garlic powder until the sugar is dissolved.
Season: Pour the mixture over the chicken and apples. Season generously with salt and a healthy amount of black pepper to balance the sweetness.
Cook: Cover and cook on LOW for 4–5 hours (or HIGH for 2–3 hours) until the chicken is tender and the apples have softened into a jammy glaze.
Thicken (Optional): For a thicker sauce, remove 2 tbsp of the cooking liquid, mix with 1 tbsp cornstarch to make a slurry, then stir back into the pot 30 minutes before serving.
Garnish: Top with fresh thyme sprigs for a pop of Spring color.
Serve: Serve the chicken and apples over mashed potatoes or rice, drizzling plenty of the golden pan juices over each portion.
