Ingredients

Main ingredients
  • 2 lbs chicken thighs, boneless and skinless
  • 4 cups mixed vegetables (carrots, peas, corn)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1 package refrigerated pie crusts

Method

Preparation
  1. Place the chicken, mixed vegetables, onion, and garlic in the slow cooker.
  2. Pour the chicken broth over the mixture and season with thyme, rosemary, salt, and pepper.
  3. Cover and cook on low for 6-8 hours or until the chicken is cooked through.
  4. Shred the chicken in the slow cooker and stir in the heavy cream.
  5. Roll out the pie crust and lay it over the top of the filling in the slow cooker.
  6. Cover and cook for an additional 30-40 minutes until the crust is golden brown.
  7. Serve warm.

Notes

For a richer flavor, sauté the onion and garlic before adding them to the slow cooker. You can customize the mixed vegetables based on your preferences. For a buttery crust, brush the top with melted butter before cooking. If making ahead, prepare the night before and refrigerate.
